To remove the Brisket Rib Rack …

… follow the line of the ribs and cut through …

… the underlying brisket muscle.

Remove the Brisket Rib Rack including the brisket muscle which remains attached to the rib bones.

Cut between the ribs to create Brisket Ribs.
